Simple outdoor grilling is my favorite when we are running and gunning in the summertime with everyone's schedules. In 20 minutes my pink Himalayan Salt Rox block is hot and ready to grill. Another 10 minutes and I have perfectly cooked medium rare buttery steaks and roasted asparagus with home grown tomatoes. I never would have thought to grill tomatoes on the salt block but one of our chefs let us in on this culinary secret!

Salty Tailgate
I couldn't believe that the parking lot was almost full at 8:20 am on a Monday morning at Riverbend more than 11 hours before the concert was to start. But here we were driving into this lot with 2000 lbs of sand, a pool, a twenty foot sail and a surfboard bar. We found what we thought was the perfect peninsula of territory in the far corner of the lot. I parked my SUV close enough to our neighbor to limit others access to our land rush prize. John started unloading the pool so that we could start building the beach. Two tents, four chairs, a pool and a beach later, it's time to put up the surfboard bar. It may look like a painted ironing board to some but it looks like a million bucks to me. My daughter and I painted the palm tree and beach design last year. Oops, we hadn't counted on gravel in the lot - a lot of gravel even a foot deep in the lot. Back up and call the following troops. Metal pipe please. Tommy finally arrived with the metal pipe and the mast for the sail. With the sail up and the bar in place, it was time to mix the margaritas and get the grill hot. The only thing left to do was to ask "What will you do for a Salt Shotz margarita shot?" The answers were great fun! There were groups that formed a congo line, others sang "Row,Row, Row your Boat", still others stood on one foot and jumped in a circle while chanting Salt, Salt, Salt. An amazing day, plans for next year have already started.
